The temperature and humidity in the KOMA proofer are adjusted to the desired level by a temperature-controlled humidifier unit. Only in a proofer is the piece of dough able to develop correctly before it "sprouts".

CDS SunRiser: Dough conditioning (-20°C / +35°C)

The quality of your products as they emerge from the CDS Sunriser is crucially dependent on the construction of the installation and its technical components. As well as the solid design of the units which is typical of KOMA, you should note the following technical features in particular: coated evaporators for optimal acid protection as well as active humidification for optimal regulating of the chamber's humidity levels across the whole width of the unit so as to ensure equal air distribution.

SDCC cabinet system: SW or PW model for single trolley

The plug-in fully automated proofer unit provides the fully perfected technology of our "large" CDS SunRiser in a highly compact form. It provides you with maximum capacity in the smallest of spaces in your bakery or store, so the consistently high quality of your dough products is guaranteed. All the process steps can be easily programmed with the aid of the KOMA computerised control system.

Recovery®

Everything that the modern bakery business needs (-20°C / +20°C)

The KOMA Recovery® units' timed thawing and fermenting functions incl. humidification ensure product stability. KOMA Recovery® offers the opportunity to bake off for very long periods once the programme has ended according to the specific requirements of your sales outlets. Generously-sized evaporator surfaces, air circulation via suspended ceiling voids and a stainless steel pressurisation wall, the new KOMA computerised control system, active humidification based on the evaporation principle, and perfectly design-rated refrigeration performance ensure a good glaze, well-defined decorative incisions, a good colour, and super crustiness and lightness as well as aroma and taste – the incomparable hallmarks of the KOMA Recovery® products which will delight your customers. By providing adequate refrigeration capacity, gentle air circulation and the option of defrosting the evaporator if necessary, every Recovery® unit can also be used as a deep-freeze storage unit.

VarioTherm

RKVC: Cabinet system with variable temperature range (-28°C /+25°C)

Preservation unit incorporating storage and blast freezing systems for packed and unpacked goods, baked and semi-baked products, meat, fish and all other sensitive foodstuffs. Due to its modular design (2 storage compartments per section) the RKVC-Variotherm can be easily adapted to the requirements of the specific place where it is to be used. As it is mounted on adjustable stainless steel feet, there is no need for major floor works.

The RKVC system can also cater for different temperatures in each section (two doors one above the other) while using only a single refrigeration circuit.

Cabinet systems

SKHV: Plug-in system with controlled air-feed system (-7°C / +18°C)

With its SKHV cabinet KOMA offers you a technically perfected solution for storing both semi-finished and finished as well as unbaked products. A dry or humid atmosphere can be set depending on the specific product. Standard version has 2 doors and door heating.

SVHD: Door cabinet system (-28°C / +15°C)

With its SVHD cabinet KOMA offers you a technically perfected solution for storing both semi-finished and finished patisserie products as well as unbaked products.

  • SVHD deep-freeze and/or recovery cabinet without humidification
  • SVHD-2 with a temperature range of -20°C /+15°C
  • SVHD-2E with a temperature range of -18°C /-28°C

HN cabinet range

Plug-in combinations of units with up to 4 doors per unit (+7°C / -5°C, -18°C / -30°C)
